Friday night was a trip to the San Antonio Zoo for Jungle Boogie nights. There was a band, food trucks and lots of fun games. Plus we got to walk through the Reptile House which made me happy. The real highlight of the night was taking the Bug Challenge and eating crickets. Don't worry they were cooked! If you follow me on instagram you probably saw the videos. They really aren't that bad!
Saturday was spent celebrating a sweet girls birthday. A giant water slide, pizza and cake. All the makings of a good time if you ask me. The boys are still sore tonight from all the climbing up and running around. They slept solid last night and I'm sure tonight they will too.
Today was all about catching up. What started as me cleaning the kitchen, turned into me emptying out the junk drawer. Then I ended up with a bigger mess than I started with. I have it currently all contained in one box on the counter. Tomorrow the boys will take what they want out of it and the rest is getting tossed. I also cleaned out my nightstand and threw out a whole bag of old junk. I'm like a contained hoarder.
ANYWAYS!
Here is what we have planned for dinners this week. Its also the week we buy dog food and every ones medications, so its a pretty frugal week. No steak and shrimp this week. Maybe next week though :)
Monday will be a busy one. On Tuesday Anthony starts swim lessons, so dinner will be done early. This Kung Pao Chicken is done in under 30 minutes and we eat it over cauliflower rice. Wednesday is our real rice day HA! Usually we do chicken and rice but I know these guys get tired of chicken and turkey so they can have beef and I will make something else for myself. Thursdays we have swim lessons again. A new recipe on a busy night, lord help me. It was originally called Heroin Chicken but after reading all the hate comments from people I figured I would go with Heroine. Poor lady, was just trying to share a recipe that she discovered and DID NOT name herself and got chewed for it. She has since changed the name to Addicting Chicken Tenders.
Whats cooking in your kitchen this week? What are some of your go to busy night dinners. I'm starting to get flash backs to our Soccer days where I feel like we hit the drive through on the way home a few to many times and I am determined to have dinner done early those days this time around.
