Menu Plan Monday: October 23rd

Things are about to get a little crazy around here this week.  Anthony is on his last week of Swim and Alex is starting another level.  So that makes 4 days of swim this week.  Dinners will be early and getting to bed late is guaranteed. And while week will be hectic, the weekend was slow and steady. Saturday the boys and I were home for most of the morning while David ran around getting the cars oil changes, up to date on inspections and registrations. Sunday we pretty much hung around the house.  A great way to prepare for the week I think.

Last week was full of good food.  The Curry Meatballs were delicious! I might stick to my own meatball recipe, but everything else was spot on.  But the Garlic Butter Mushrooms were it for me.  I had to hold myself back from pouting when the mushrooms at the store were all sold out.  How does that even happen?  Anyways, meatballs....yum!

The plan for this weeks menu was to keep it quick and easy.  Nothing that takes to much effort and can be done before I get the kids.  They will be needing to eat early and let it all settle before they jump into the water.  And I'm not sure which one of these days I'm looking forward to most.  Probably Thursday!

  • Fettuccine Alfredo and Shrimp
  • Garlic Toast

FRIDAY
  • Baked Chicken Thighs
  • Mixed Veggies
