The weekend started with a thunderstorm and daydreaming in a camera store and ended up with only one of us making it to the Strawberry Festival and a crap ton of yard work. Everything hurts! And you know what? I'm cool with that. We are officially in "save" mode. There are 54 more days before Summer vacation #1 starts. We reached our savings goal for that trip and are just topping off our goal for trip #2. So staying at and not spending money worked.
Now its Monday and we are back to the grind. For me as a stay at home mom, that means getting this house back in order, scheduling appointments and making sure everyone is ready for the day and is out the door in time. Turns out it also means staying up Sunday night to do more laundry because even though I washed all the laundry that was in their baskets, all their socks and underwear magically appeared in it last night and they need washing. Where were all these when I did laundry? Do I even want to know?
It also means cooking. Here's this weeks menu!

Clean out the fridge night!
The Shrimp and Sausage Skillet was a big hit last time I made it. I am doubling up on the shrimp today and hoping that it will end the start of another week with all smiles. My guys love them some shrimp. FYI, this meal takes 20 minutes. TWENTY MINUTES YALL!
The Green Chile Fiesta Chicken was the first thing to pop out to me while I was scrolling through Pinterest. Totally threw my grocery list together last minute.
I had a craving for some steaks but I'm hoping the cheesesteaks do the trick. We are skipping the bread, but I think it will be delicious stuffed in a bell pepper. David might not but, he will just have to get over that!
Then comes this recipe for Healthy Teriyaki Chicken from the hilarious Gigi from Gigi Eats Celebrities. I don't have an air fryer yet, so I'm doing this in the oven. And it's the first time I will use Tamari, erythritol, and tapioca starch. I'm excited to try it.
