So after a night of up and down with the sick one, and a pretty decent morning with a moody teenager, I'm trying to get my day in order. I have made the dogs food for the week and bagged Koopas food for the week too. I made English Muffin Bread for the humans. Grandma and Grandpa brought Alex a care package of soup, gatorade and extra medicine. I love them something big!
But while I sit and make some phone calls I figured I should write my menu out for the week. I started this at 9 am and its almost 5pm now. I meant to do this last night and be ahead of the game but I was busy on a cleaning kick. Then crawled into bed with a book. But at least it's done. I might end up changing a few things around but for the time being, here is this weeks menu!

Can you tell I have a thing for citrus? I still have quite a few lemons to use up, so when I saw the Grilled Lemon Chicken, I figured why not. Plus it was on Instagram and everything looks so damn good on there. I had already put the Lime Chicken on the menu and figured why not! Alex has been asking for lumpia, but hes congested today so I pushed that until tomorrow. It would really suck if he couldn't taste the dinner he chose!
Now about that Chick FilA sandwich, its pretty much a breaded chicken breast sandwich. But I a friend posted something about a Chicken Sauce that Walmart sells and its supposed to be a knock off of Chick FilA sauce, so, add some pickles, lettuce and tomato and we will see how it comes out. Also, I meant to get waffle fries to round out the experiment, but I guess I ordered Checkers Fries instead. Which works because they are my fav! The air fryer is preheating!
There you have it. Two heavy and two light meals. Could be worse right? It's the weather, has us all wanting comfort food. Alex and I always pick lumpia!
Also, I have a clean kitchen, 4 loads of laundry done, floors are vacuumed and mopped and the bread is warm and perfect. But now Im feeling like a nap is in order but its time to start dinner. Would a 4th cup of coffee be overkill?
