Happy Monday! Today is feeling like a good day for a fresh start. Or is that just the weather that Im feeling? Its been a cool morning after some rain last night. And tomorrow is supposed to be freezing. Texas freezing, not like real freezing. So in the 50. And rainy. So I better enjoy the energy I have now, because it will be hard to find it tomorrow.
And while Im at it, I figure I should get my menu up. Its planned. Ish. I don't have specific days and meals planned but I know what I have to make. For the guys only. Im still working on what I want to make for myself. Last week I decided that making 2 or 3 meals and prepping them for the week was the best way to make sure I ate it all. I hate throwing away food. Even the 30 cent cilantro. So in order to stop tossing so much at the end of the week, I decided to just make less. And it seems to be working. Here is what we have lined up for the guys this week.

Anyone else have a hard time trying to get some suggestions for weekly meals? I know it can't just be me. So this week I decided I was over trying to figure it all out myself. I went though my pinterest boards, screen shot a few photos and sent them to our family group text. Everyone picked one thing. Well, Alex picked 2 and I threw in the 5th meal. Done! The boys each picked a bowl. I guess veggies are easiest to eat when they aren't a stand alone side dish! And David picked the Zucchini Enchiladas.
I don't usually plan weekend meals. I have ideas of things to make with what he have lying around. One of the days is usually a leftover day if we have it. But I like to use the weekends as a time to clean out the fridge before I make room for the next week. Or we grab something quick at the store when we are shopping. Or pizza on the way home if we are really running late.
