Im rolling in late today with the menu. I actually just realized I hadn't shared yet. I shared it in my head but it didn't quite make it here. How bizarre! Kidding, its just been a day. And before I knew it, my "whats for dinner" alarm was going off. Oh Monday.
We are actually headed out to get groceries in a little bit. We were going to run to the store yesterday, but totally slacked and the weather was just miserable. So we stayed in and stayed warm instead. I put the order in and let them do the shopping for me. If we are friends on Instagram you already got a sneek peek at the menu but if you aren't...why not? Can you tell I got my meat at Sams Club? Oh the joys of buying bulk. The older the boys get the more thankful I am for that. I got a double pack of chops for the same price I would pay in HEB for chops. And they are THICK! Same goes for the chicken. Im all for saving money. Eggs, bread, meat and water. Our bulk staples. And veggies. Got a bad of avocados for the price of 2.

So what am I eating this week? I totally just pulled that menu out of my hat. I have so much to choose from it isn't funny. I got this new super grain blend with quinoa, millet and buckwheat that I am going to cook up and toss with a salad. I also have some tofu that I will season stir fry. And tonight I had potatoes and veggies. I pretty much have just been getting a ton of veggies and then just tossing a good mix of everything into a bowl and calling it good. I need to be more intentional and get back to planning my meals too. I deserve a well planned menu as well!
Last week was kind of a doozy. This week is looking much better. Today was busy but good and tomorrow I will have a 12 year old. Where has the time gone. I can't believe it. What an adventure this life of mine has been in that time. I wouldn't change it for the world though. I wouldn't even be here if he wasn't. My saving grace!
I know its probably to cold for many of you to be out grilling, but Im open to new recipes. I am going to keep at it and enjoy the clean kitchen. Might even have to get a cast iron for the grill. Yup, our next house will have an outdoor kitchen. Believe that!
