Another week, another menu. Seriously though, where did the weekend go? As much as I wish they lasted longer, I see you Monday. Im ready to get this week on the road and see how it answers a few of the things we have been waiting to hear about.
Im also really excited about this weeks menu. Mostly because I will be able to enjoy most of it with just a few changes. It is filled with veggies and lots of color. If you know me, you know how I love a good colorful meal. Eat the rainbow. Want to see what we are having? Here is this weeks menu.

Its going to be a tasty week for sure. And even better because for the most part, its all real quick too. Im loving these meatless meals. The boys were not super sure about last weeks lentil bolognese, but they have had the Quinoa Casserole before and ate it up. I am thinking of it as practice for lent. The real goal is just to get more veggies into these guys. They eat a pretty balanced meal but can get a little stuck in their ways when it comes to vegetables. So we are trying some new things. Cross your fingers with me would ya?!
