You guys. Eating healthy is hard. Ok not really hard but its hard when eating for you health means trying to listen to multiple doctors different restrictions. The struggle is real. Sigh. I know I should be thankful for the health I have, and I am but damn if it sucks sometimes. Its a challenge and something to overcome. Thats what I keep telling myself anyways. I got this!

I usually keep our Mondays pretty light and the plan was to have a meatless Monday, but today we are headed to meet our new Pediatric Endocrinologist. The office is over an hour away so David will be dropping Anthony and I off and then probably heading back to pick up Alex from School. Then hopefully by the time they are back, we will be about done with his appointment. Well if all works well we will be done before David has to duck out. Oh the joys.
So we picked up groceries this morning. And we have everything to make the wraps tonight. As much as I love a good home cooked meal that time and love is put into. But sometimes throwing some Tyson chicken tenders in the oven and then wrapping it up with Caesar dressing and some lettuce and tomatoes works too. I could used grilled chicken I suppose but they asked for crunchy chicken and I said yes. We gotta do what we gotta do. No guilt, no judgment!
