New week, new menu. Anyone else get all sorts of lost when holidays fall on a Monday. Like, do we have to go with the usual routine or can we just take the day off? Le sigh. If only it was that easy right? I will say that I have milked about all the rest I could out of this weekend and I finally ended up getting out of the comfy bubble that is my bed and joined the living. Even left the house to get stuff to make dinner. No one was liking my hot pockets for dinner suggestion. Yeah, thats how checked out I was earlier. We ended up grabbing things to make burgers instead. Impossible burgers for me and probably Anthony too. He ate mine last time and didn't even know until I realized it was gone. I should have figured it out when he said it was more "meatloafy" that usual.
So since I was running on energy saving mode pretty much all weekend, I have to admit that I have yet to order groceries or even have any sort of menu planned. It happens. I do have a few ideas and thankfully the freezer is pretty full of meat options. So I can pretty much figure it all out as I type. Let's see how that works out for me.

I have salmon, boneless and bone in thighs in the freezer. The spatchcocked is just something I saw someone do on facebook and thought "Hey! I want to cut the spine out of a chicken too!" so I figured Id try to get ahead of the game and have something for Saturday too. Which if Im being honest, the guys will eat the legs and thighs and I'll shred the rest for sandwiches or something on Sunday. Win win. As long as I am feeling more alive next weekend.
We grabbed stuff for burgers on a whim today and I didn't even think about the fact that Alex asked for beef tacos tomorrow. So the guys get 2 red meat dinners this week. Plus Salmon. Not all chicken as usual. I kid. I really do try to add a few non chicken dinners each week. Just some weeks I fail. Oops.
Anyways. Now that I know what Im going to make I suppose I should get to ordering groceries. Pretty much veggies, veggies and more veggies. Hopefully I didn't procrastinate to long and there are slots open for curbside because how did I ever survive before this was an option. The new HEB isn't as crowded as the one in San Antonio but I still get cart rage every. single. time!! I avoid stores like its a pandemic. Even before there was an actual freaking pandemic. Sometimes I have to suck it up, like today, but I keep it as quick as possible. I just to people-ly indoors.
So there you have it. My crash course on last minute menu planning. David always asks me how is it that when I have the whole week to plan a menu, I end up panicked on Friday night trying to figure it out but when I have one day to do it, it gets done in under 30 mins. Because, I get lost on Pinterest or side tracked by IG. If he could just keep the freezer stocked with meat, I can just go off of what we have there as a starting point. I think I will do that. Send his butt to the store to get meat and then build their menu off of that! Yes! New rule!
