This weeks menu is going to be short at sweet. For those of you who follow me on IG, you might have seen that we have a new addition in the house and he been keeping me busy. But we are so in love with him so we are adjusting. If you aren't following me and love puppies, come hang out with me HERE. Ive been trying not to just spam everyone with photos but I kinda think Im just going to give in, hes to cute not to share.
Before I get distracted, lets talk food. I started seeing a nutritionist at the Liver Clinic and she is awesome. I will admit, that I was going strong for a while there and really dialed in but the last few weeks have been a little iffy. So, I pulled out the papers she gave me and made sure that I had enough of everything for my meals and came up with dinners for the boys that I could enjoy too. That whole two separate meals plan was great when it worked, but it was just so hard to maintain when I got behind. Which, happens, so I said peace out to that. Here is what I came up with for this week.
Pepper Steak Stir Fry. It claims its a 15 minute meal, so we are going to find out how true that is. I have some cauliflower for rice, but I might make brown rice pilaf instead. Or maybe a mix of both.
Cheesy Baked Tortellini. Confession time! Ive never made these before so Im a little nervous to see how they are. I mean its hard to go wrong adding sauce and cheese to anything right? Im not a big pasta sauce kinda girl, unless its on pizza, but I saw these and figured we could try it and see.
Creamy Garlic Shrimp. Anthony has been asking for Alfredo, but I wanted to keep it a little lighter. Got a big ole spaghetti squash to eat along with this too.
Baked Chicken. I have a package of chicken legs that I didn't get around to cooking last week. Im not sure if I want to do the garlic parm I had planned or something else. But I do know I have some fixings for a salad to go along with this.
Instant Pot BBQ Ribs. Another quick and easy meal that I know the boys will devour. Ive been trying to utilize my IP more. Trying. And so far I have gathered a few wins that I can always fall back on including this one! The best part is, no leftovers. Yes, they will finish off a whole rack of ribs between the two of them. I have learned to grab a few ribs before I call them down for dinner. Im raising animals!
I have options for my lunches. Salmon of course. Lots of veggies. And if I don't have it earlier or later, I can always mix up a shake real quick. As long as I get my protein in. Which, after the nutritionist pointed it out, I was not getting nearly enough of. My bad.
This week my goal is going to be to get back on track with tracking my food, moving my body and getting enough sleep. The sleep part has been easier, because...puppies are exhausting. I just need to get in a better mindset. I keep saying I need to get back to my old routine, but clearly it wasn't working if I ditched it. Or maybe its just me. I need to just get my ish right with the world again. Baby steps I suppose.
So thats it. This weeks menu and a reminder that sometimes life gets away from you and a little off track. AND THAT IS OKAY! What matters is that you pick yourself up, dust yourself off and try again. Thats all we can do. Just keep going!
